In 2019 Daniel Mellicovsky expanded Melly’s cookie dream next door, incorporating Daniel’s dutch side by making traditional Dutch Stroopwafels with a twist.
A stroopwafel’s wafer layers are made from a stiff dough of flour, butter, brown sugar, yeast, milk, and eggs that has been pressed in a sizzling waffle iron till crisped. While nonetheless warm, the waffles have their edges removed with a cookie cutter. A caramel filling made from syrup, brown sugar, butter, and cinnamon—additionally warm—is spread between the wafers before the waffle is reassembled.
